Cooking with Cristian: Todd’s Treats

What started as a way for him to help his church, quickly turned into a business. Todd Eller, Owner of Todd’s Treats, now sells more than just his biscotti.

Todd’s Treats works out of a ghost kitchen in Benton City but serves the community through local events and farmers markets.

“When I left corporate life, I was trying to figure out what to do next and it just made sense” said Todd Eller, Owner of Todd’s Treats.

According to The Biscotti Company, Biscotti originated in medieval Italy, specifically in the region of Tuscany and Emilia-Romagna. The tradition of biscotti is well established in Italy, and it remains one of the most popular types of cookies enjoyed in Italy and around the world.

Eller tells NonStop Local that there are 5 different flavors of biscotti available to purchase. There is: Anise and Almond, Ginger Snap, Orange and Dark Chocolate, Lemon and Pistachio and Maple, Cinnamon and Pecan.

Making Biscotti:

Ingredients:

– Flour

– 4 Eggs (room temperature)

– Sugar

– Butter (room temperature)

– Baking powder

– Flavoring of choice (Todds advice: Find fruit emusions instead of other types of flavorings)

Directions:

1. Mix all ingredients into a bowl until dough is formed

2. Roll dough into log shape (Should make 4-6 logs)

3. Bake at 350 degrees for 30-45 min. until golden brown

4. Let cool for about 20 min.

5. Slice, then place back in oven at a lower temp to crisp.

6. Enjoy
