PASCO, Wash. – The recent Pasco Taco Crawl provided locals with a flavorful journey through several restaurants in the area, allowing them to vote on their favorite tacos.
Trejo’s Mexican Restaurant emerged as a four-time winner, showcasing its culinary prowess once again. NonStop Local’s Eli Kern visited Trejo’s Mexican Restaurant to uncover the secrets behind its acclaimed tacos.
The restaurant, operated by Cesar Trejo and his wife since 2009, has become a beloved spot in Pasco, offering more than just a delicious meal. Trejo shared the journey that brought him and his family to the United States. “We started out in Tijuana. We had two restaurants there, but due to the violence and instability, especially with our small children who were at risk, we decided to emigrate to the U.S. in search of better opportunities,” he said.
The flavors at Trejo’s Mexican Restaurant reflect a unique blend of influences. “It’s a fusion of Mexico City, where I was born, with knowledge from one of my brothers, and the flavor my wife brings—she’s from Tabasco. All the seasonings are full of flavor. She has a special touch for cooking,” Trejo explained.
Finding success in Pasco has been a relief for Trejo and his family after escaping violence. “It’s definitely a relief to have the financial stability we have now. We’ve been able to support our kids in their education. But it saddens me to know that many people are still living the way we did—sleeping in the living room, behind on rent. I know that unless some people work two shifts, they can’t get ahead. But it’s possible. We’re proof,” Trejo said.
Trejo expressed gratitude to the community for embracing their family recipes. “It might sound repetitive, but I believe it’s true: Sí se puede—Yes, it can be done. That’s a common phrase in Mexico, and it’s real,” he stated.
