Business Spotlight: Neighbor’s BBQ

Kennewick, Wash.- Neighbor’s BBQ is a mom and pop food truck bringing Texas barbecue to the Tri-Cities. Owner and Pitmaster Michael Hicks grew up in Texas and had never made brisket until he moved to Washington State. “I didn’t have to, it was everywhere,” said Hicks. “When we moved near Seattle in 2010, I had barbecue withdrawals.”

That’s when Hicks decided to start cooking it himself, eventually leading him to open Neighbor’s BBQ. “It was never the plan to end up owning anything, I started cooking it for myself.”

Hicks smokes the brisket Central Texas style, with salt and pepper as a rub and oak wood for the flavor.

“We aren’t chefs or anything, we’re just normal cooks,” said Hicks. “We try to make everything homemade like you would at the house.”
